Summer Avocado Smash

Ingredients

1 Hass avocado, diced
2 Thick slices of bread, toasted
1 Handful of fresh mint leaves
10 Cherry tomatoes, halved
1 tbsp Olive oil
100 g Feta cheese, crumbled
Lime juice, to taste
Salt and pepper, to taste
Pepita seeds, for garnish (optional)

Method

Halve the cherry tomatoes, pick and roughly chop the mint leaves, and dice the avocado.

In a medium bowl, combine the diced avocado, cherry tomatoes, mint leaves, crumbled feta, and olive oil. Squeeze in lime juice, then season with salt and pepper to taste. Stir gently to blend the flavours.

Toast the bread until golden, then spoon the avocado mixture generously over each slice.

Garnish with pepita seeds if desired, and serve immediately.
