Hot Honey Guacamole with Peaches & Feta x Tom Walton

Guacamole
 5 Ripe Avocados
 ½ Small Red Onion, diced
 ½ Bunch of Coriander
 2 cloves Garlic, grated
 2 Limes, zest and juice
 1 pinch Smoked Paprika
 Salt & Pepper, to taste
 3 tbsp Hot Honey
Hot Honey
 ½ cup Honey
 1 tsp Chilli flakes, to taste
 1 tsp Apple Cider Vinegar
Topping
 3 Ripe Peaches
 150 g Feta, crumbled
 Tortilla Chips, to serve

Make the hot honey by gently heating honey with 1–2 teaspoons chilli flakes and a teaspoon of apple cider vinegar until warm and infused.

Cut the avocados in half, remove the seed & scoop the flesh into a bowl.

Using a whisk or fork, mash the avocado then add the lime zest & juice, garlic, paprika, onion, coriander & half the hot honey.

Season to taste and spoon into a serving bowl.

Spoon over the peaches and feta then finish with remaining hot honey.

Serve with corn chips.
