Grilled chicken avocado sandwich

Ingredients

2 avocados, thinly sliced
3 chicken thigh fillets
1 tsp garlic powder
1 tbsp lemon juice
large pinch of salt and black pepper
1 tbsp olive oil
¼ cup thinly sliced celery
1 spring onion, finely sliced, green only
1 tbsp chopped fresh chives
3 tbsp mayonnaise
2 tbsp wholegrain mustard
1 tsp chilli flakes (optional)
1 cup salad sprouts (alfalfa or radish)

Method

Mix chicken thigh, garlic powder, lemon juice, salt and pepper in a bowl.

Heat oil in a cast iron frying pan on high and grill chicken for 5–6 minutes on each side until golden and cooked through. Remove from heat, cool for 10 minutes and cut into 1cm pieces.

Add cooked chicken to a large bowl with celery, spring onion and chives.

Mix mayonnaise, mustard and Sriracha in a small bowl. Add to the chicken in the bowl and mix well until evenly coated.

Slice the Focaccia bread in half horizontally. Place both slices on a board, cut side up.

Add avocado slices to both halves. Mash them lightly with a fork. Add chicken mixture on top of the avocado on one half and sprouts on the other half. Bring both halves together and close the sandwich. Cut and enjoy.
