Caprese Avocado Smash

Ingredients

1 Hass Avocado
2 slices sourdough or preferred bread of choice
juice of half a lemon
salt & pepper
1 cup sliced cherry tomatoes (I used tomato medley)
½ cup sliced baby bocconcini
2 tablespoons balsamic glaze
2 tablespoons extra virgin olive oil
torn fresh basil for garnish

Method

Prepare your avocado smash by roughly mashing your avocado with salt, pepper & juice of half a lemon. Set aside.

Toast your sourdough in a griddle pan with olive oil, or in a toaster if preferred.

To plate up, spread the avocado smash over your bread. Arrange the sliced tomatoes & bocconcini. Season with salt & pepper. Finish off with a drizzle of balsamic glaze & olive oil.

Garnish with fresh basil.

Serve immediately.
