
Ingredients
Olive oil spray
4 slices short cut bacon
4 thin slices sourdough bread
½ large firm ripe avocado
1 tbs low fat mayonnaise
1 vine ripened tomato, sliced
4 baby cos leaves
Method

Heat a large non-stick frying pan over a high heat, spray with oil. Cook the bacon for 2 minutes each side, or until golden and crisp.

Meanwhile, toast the bread until golden. Place the avocado in a small bowl and roughly mash.

Spread avocado over 2 slices of the toast, spread mayonnaise over remaining 2 slices of toast.

Top avocado with 2 bacon slices, some tomato and 2 baby cos leaves. Top with other slice toast.

Serve immediately.
