
Ingredients
1 avocado
9 free-range eggs
1 brown onion or leek, thinly sliced
60 g baby spinach
75 g goats cheese
¼ cup cream
1 tbsp olive oil
1 bunch of asparagus
Parsley
Pinch of salt and pepper
Method

Preheat oven to 200 degrees celsius.

Heat olive oil in a frying pan and cook the onions over medium heat until caramelised. Set aside.

Add asparagus to the pan and cook over high heat until softened and browned. Turn off the heat and add the spinach, allowing it to wilt with the residual heat.

In a small bowl, whisk 3 eggs & cream together.

Place all the cooked vegetables in a baking dish. Add cubes of ½ an avocado and add goats cheese.

Pour over the egg mixture and crack additional eggs around the dish.

Bake for 15-20 minutes or until the eggs are just cooked.

To serve top with the remaining half of avocado and fresh herbs.
