Avocado Hummus

Avocado Hummus

Ingredients

1 avocado
400 g chickpeas
1 cup baby spinach
Juice of 1 lemon
3 tbsp water
cup frozen peas
2 tbsp tahini
2 tbsp olive oil
1 garlic clove
Pinch of salt and pepper
Toasted mixed seeds (eg sesame seeds, pepitas, sunflower seeds) to serve

Method

Drain and rinse the chickpeas. Roughly chop the spinach.

Place all ingredients (except the toasted seeds) into a food processor. Puree until smooth, scraping down the sides as needed.

Serve in a bowl topped with a drizzle of olive oil and toasted seeds. Dip with any corn chips, bread or fresh vegetables.
