Lebanese Avocado Breakfast Smoothie

Lebanese Avocado Breakfast Smoothie

Ingredients

For the avocado layer:
4 ripe Hass avocados
½ cup milk
¼ cup honey
For the Banana/Mango layer:
2 diced mangos if in season, alternatively use 2 cups frozen diced mango
1 ripe banana
½ cup milk
¼ cup honey
For the strawberry purée:
250 g punnet strawberries
2 tbsp of honey
To serve:
4 smoothie glasses
4 heaped tablespoons of Ashta (Lebanese clotted cream) OR alternatively use thick ricotta
Raw cashews for garnish
Honey for garnish
Chopped strawberries, banana & avocado for garnish

Method

1

To make the avocado puree, in a blender or bullet add your ripe avocados along with the milk & honey. Purée until smooth & thick. Set aside.

Do the same with the banana/mango also the strawberry puree, set aside.

To assemble, add the avocado purée to your glasses first. Followed by chopped strawberries/banana.

Top avocado purée with the banana/mango purée followed by more fruit.

Top with strawberry puree. Finish by adding a dollop of ashta or thick ricotta.

Garnish with sliced avocado & strawberries.

Top with honey & cashews.

Note - the purees can be made 24hours in advance & refrigerated until ready to assemble. They can also be smashed together if you don’t have access to a blender.
