
Ingredients
2 chicken breast schnitzels
salt & pepper
2 tablespoons olive oil
Avocado Caesar Dressing:
1 Hass Avocado
3 heaped tablespoons good quality whole egg mayo
2 cloves of garlic, crushed
½ teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
juice of 1 small lemon
¼ cup shredded parmesan
lots of cracked black pepper
pinch of salt
water to thin out if needed
Croutons:
2 cups stale cubed bread of choice
2 tablespoons olive oil
To serve:
1 baby cos lettuce, shaved parmesan & sliced avocado for garnish
Method

Season chicken with salt, pepper & drizzle of olive oil. Grill or pan fry. Slice & set aside.

Make your dressing by combining the dressing ingredients in a small food processor, or use a hand blender. Thin out if preferred by adding water. Set aside.

For the croutons, combine with olive oil and bake in a 180°C oven for 10 minutes. Set aside.

To assemble, layer cos lettuce, croutons, chicken, shaved parmesan and sliced avocado. Drizzle with the Avocado Caesar Dressing and serve.
