Avocado brekkie pizza

Ingredients

1 small avocado
2 tsp lemon juice
2 tsp finely chopped chives
pinch chilli powder
2 tsp olive oil
2 Swiss brown mushrooms, thinly sliced
1 small pizza base
1 fried egg
2 cherry tomatoes, halved

Method

Preheat oven to 200C.

Coarsely mash avocado in a bowl. Stir through juice, chives and chilli powder. Season.

Heat oil in a frying pan over medium heat. Cook mushrooms until tender. Season.

Place pizza base on an oven tray.

Bake for about 5 minutes or until crisp. Remove from oven. Spread with avocado. Sprinkle with mushrooms and tomato. Top with fried egg.

TIPS - This fabulous avocado pizza is the perfect base for any of your favourite breakfast ingredients. Try adding grilled chorizo, chopped bacon or some fresh baby spinach. For a big family version, use a large pizza base and top with four fried eggs.
