
Ingredients
1 Shepard Avocado
½ tsp Sumac
1 tsp Bagel Seasoning
Salt & Pepper, to taste
Olive Oil, for brushing
½ Lemon, juice of
2 tbsp Mint
2 tbsp Dill
1 cup Cottage Cheese
1 Garlic, clove
2 tbsp Chives, sliced
Chilli Flakes, optional
Extra mint for garnish, optional
Method

Cut the avocado in half widthways, remove the seed, peel and thinly slice into rounds.

Place these onto a plate, sprinkle over the sumac, bagel seasoning, salt, pepper, lemon and generous drizzle of olive oil.

Lightly oil the sourdough and toast in a hot frying pan. Then rub with the garlic.

Blend the peas with the lemon zest, mint and dill to crush then fold into the cottage cheese & season to taste.

Spoon the pea mix over the sourdough, top with avocado rounds and any bits from the plate and finish with the chives, mint, chilli flakes and more lemon if desired.
